Physicochemical and Antioxidant Properties of Red Ginseng Starch, a By-Product of the Red Ginseng Industry

Abstract
Red ginseng starch (RGS) is one of the by-products of the manufacturing process of red ginseng concentrate. In this study, the total ginsenoside, phenol, and flavonoid contents in RGS were measured to be 2.9, 7.5, and 0.4 mg/g, respectively, while the 1,1- diphenyl-2-picrylhydrazyl and 2,2'-azinobis (3-ethylbenzothiazoline- 6-sulfonic acid, ABTS) levels were increased by 50% at 471 and 270 ¥ìg/mL of RGS. This by-product of the red ginseng industry may thereby prove to be a functional cosmetic and food material.
